2 cups dried kidney beans
1 bay leaf
1 strip of Kombu
1 cup celery, chopped
¼ cup fresh parsley OR cilantro, chopped
4 green onions, chopped
2 tablespoons olive oil or flaxseed oil
1 tablespoon ground flaxseed
½ teaspoon red chili flakes
1 teaspoon dried oregano
1 tablespoon shelled hemp seeds
2 tablespoons balsamic vinegar or juice from one lemon
Sea salt and black pepper to taste
Method:
1. Soak beans overnight with one bay leaf and one strip of dried Kombu. Boil beans (including bay leaf and Kombu) for 1 to 1.5 hours, or until beans are soft. Remove the bay leaf and Kombu after about 20-30 minutes, before they start to shred and discard. Skim the foam while cooking.
2. Once beans are soft, remove from heat, and drain. Let cool.
3. Mix cooled beans and all other ingredients in large bowl, except hemp seeds.
4. Sprinkle hemp seeds for garnish. Serve at room temperature or chilled."
